This avocado salad with chicken is a salad that has many nutrients and is also tasty. It has vegetables, peanuts, vinaigrette and has a creamy and healthy texture.
INGREDIENTS
- 1 lb (450g) boneless, skinless chicken breast
- 1/2 teaspoon salt and fresh cracked pepper
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 tablespoons lime juice
- 2 cups chopped Napa cabbage
- 1 carrot, julienned
- 1 radicchio, chopped (optional)
- 1 avocado, thinly sliced
- 1/2 seedless cucumber, thinly sliced
- 1/2 red onion, sliced
- 1 handful fresh cilantro, chopped
- 1/4 cup peanuts, chopped
The avocado peanut dressing
- 1/4 avocado
- 1/2 cup peanuts
- Juice of one 1/2 lime
- 1 garlic clove
- 1/4 cup rice vinegar
- 1/2 teaspoon salt + 1/4 teaspoon fresh cracked pepper
METHOD
1-First, peel the chicken. In a large bowl, combine the honey, lemon juice, soy sauce, and pepper. Marinate the chicken breasts for at least 30 minutes in the mixture.
2-Heat a pan over low heat. Drain the chicken breasts and cook at medium-low heat for 3-4 minutes. Set chicken aside once cooked. Let cool a little and cut it into slices.
3-For the dressing: mix the following ingredients: avocado, rice vinegar, peanuts, lemon juice, and garlic in a blender or food processor. Season with salt and pepper.
4-Combine the carrots, cilantro, chopped napa cabbage, red onion, and radicchio in a large bowl and mix well. Season with salt and pepper. It is ready to serve.
