Healthy Cucumber Tomato Salad

This is a good recipe for lunch or dinner, it is quite filling and can be shared.

INGREDIENTS

  • 1 1/2 pounds diced heirloom tomatoes
  • 1 large English cucumber, peeled, halved and thinly sliced
  • 5 large basil leaves, thinly sliced
  • 3 tablespoons olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 1 teaspoon of honey
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

METHOD

Combine all the ingredients in a bowl, stir well. If you need to cover refrigerate, then you can serve it.
