The Mexican style shredded chicken tacos are a more than all delicious option and with excellent ingredients for the taste, but they still have a bit of carbohydrates that we must consider.
As we all know, tacos are a very popular and widespread Mexican food both inside and outside of Mexico. It is a fundamental part of the gastronomy of that country. The ways to prepare it vary a lot but in the following Mexican style shredded chicken tacos recipe I will show you a way to do it that is very delicious.
- 1 kilo (2 lbs.) of chicken breast
- 1/2 white onion
- 1 sprig of coriander
- 1 clove garlic
- 1 teaspoon salt
- 3 tomatoes, chopped
- 1 bell pepper, chopped
- 1/2 medium onion, chopped
- 2 serrano peppers, finely chopped
- 1/2 teaspoon ground cumin
- 1 cup of chicken broth
- 1/4 cup chopped cilantro, divided
- 2 avocados, cut into cubes
- Corn tortillas
Put the chicken breasts in a bottomed pot with enough water, add coriander, garlic and salt to the pot. Then let it boil over medium heat. When the chicken is cooked, let it cool and we must proceed to shred the chicken in its entirety. The chicken fajitas should be the size that you prefer but I recommend that they are not very large.
Sauté the onion and bell pepper in a large skillet over high heat for about two minutes while stirring constantly.
Then we proceed to add the shredded chicken, the chopped tomato, the chopped chili and three tablespoons of coriander and the chicken broth, which is the water resulting from cooking the chicken.
Stir everything well and leave over medium heat with a lid on the pan for 10 to 15 minutes.
Then it’s ready and we can serve it. For each taco we can place two or three tablespoons of chicken in our favorite taco shells. We will also add cilantro and diced avocado, lemon juice and that’s it.
